
Jam Bars🍇🍓

Sometimes I am rich in jam. 🤑 Whether my husband and I bought more than we can handle from Costco, or lovely people gifted us with homemade jam, I semi-regularly find my self stressed out with what to do with jam so it doesn't go to waste. No longer!
My new go to for extra jam is jam bars. This recipe involves a gluten free crust and crumble that aren't super sweet so that the featured jam can shine. ✨️

Ingredients🍓🍇🍊
• 60g butter, 430kcal (I used Kirkland Signature Grass Fed Butter)
• 120g King Arthur Flour, Measure for Measure Flour, Gluten Free, 390kcal (Bob’s Red Mill, Gluten Free 1 to 1 Baking Flour also works well!)
• 40g rolled oats, 150kcal
• 20g cane sugar, 75kcal (brown would work well too)
• 60g non-fat Greek yogurt, 35kcal (I used Kirkland Signature, Organic Nonfat Greek Yogurt, Plain)
• 1 large egg, 70kcal
• 285g jam of choice, kcal will vary, but ~700-800kcal (I used Bonne Maman, Strawberries Cherries Redcurrants Raspberries Four Fruits Preserves, Strawberries Cherries Redcurrants Raspberries, which would come to ~720kcal)
Instructions⚡️⭐️
1. Pre-heat oven to 350 degrees F.
2. Melt 60g of butter for about 15-20 seconds in the microwave.
3. Add flour, oats, and sugar, and combine until everything is covered with butter and forms well-mixed crumbles.
4. Set aside 3/4 cup of the crumbles.
5. To the remaining crumbles, add Greek yogurt and egg, and stir until the mix becomes a dough.
6. Spread the dough into an 8x8 or whatever small to medium dish you have (I think mine was 6.5x3.5).
7. Top the dough with jam, spreading it in an even layer with a rubber spatula or spoon.
8. Sprinkle the crumbles evenly on top of the jam.
9. Bake for 30-35 minutes (it's a bit of a guessing game, but you can check for browning crumbles and by inserting a toothpick to see if the dough is raw).
10. When the jam bars are all baked, let them cool on the counter, cover them, and leave them in the fridge over night or for 4-6 hours.
11. Cut, serve, and store. Yum!
