
Hot Cocoa Brownies (Gluten-Free!)

Merry Chirstmas, store is closed, and it's time for some last minute baking. No cocoa powder in the house, so I'm going to use what I have, which is a lovely hot chocolate gift of Chocolove Dark Chocolate (arguably better than plain cocoa powder), to make brownies. Hooray! Blessed holidays to you. Let's bake!
Warning, these are delicious. I ate two once they were baked. 😂 They turn out a bit cakey, but definitely scratch the brownie itch.
Ingredients
• 3/4 c (80g) Danish butter, 629kcal
• 1tbs (14g) canola oil,
• 1 cup (264g) Chocolove Hot Cocoa Drink Mix – Dark Chocolate, 805kcal
• 2 large eggs, 140kcal
• 1 tsp vanilla extract (or a few squirts of sugar free vanilla coffee enhancer)
• 3/4 c (111g) Bob’s Red Mill, Gluten Free 1 to 1 Baking Flour, 390kcal
• 1/2 tsp baking powder (or 1/2 tsp minus a bit baking soda)
• 1/4 tsp salt
• 2 tbs (30g) Kirkland Greek yogurt, 20kcal
Instructions
1. Preheat oven to 350 degrees F.
2. Line an 8x8 in baking pan (or whatever you have—I used an 11.15x6.48 in one 😂) with parchment paper and set aside.
3. In a medium bowl, melt butter in the microwave in 30sec increments until it is completely liquid.
4. Add oil, eggs, hot cocoa, and vanilla, and beat together until well-mixed.
5. In a separate bowl, combine flour, salt, and baking powder.
6. Add the dry mixture to the wet mixture and fold it in.
7. Add the Greek yogurt, and stir until everything is homogeneous (can't see the individual parts).
8. Pour the batter evenly into the parchment lined baking dish.
9. Bake for 22-30minutes, or until a toothpick comes out clean.
10. Let cool for 5 minutes before serving or storing.
