Boyfriend Approved Peanut Butter Cookies

I'll be honest, my cooking can be quite hit or miss. I made these cookies for my boyfriend, and he said they were the best cookies he's had in a long time (he's not biased because he did not like the protein cookies from my last post at all). The secret is brown sugar and love. 💕

Ingredients

-225g creamy peanut butter (about 1 cup), 1266kcal (I used Kirkland organic, so if you use a different one calories and taste will be a bit different)

-180g brown sugar (about 1 cup), 675kcal

-1 large egg, 70kcal

-Sea salt (sprinkle a bit on each cookie or add a pinch or two to the dough)

-Parchment paper (equipment is a more accurate term than ingredient here, so please use and don't eat ☺️)

Instructions

1. Preheat oven to 350 degrees F.

2. Measure out peanut butter into a bowl. Zeroing out a food scale, setting the peanut butter jar on top, and zeroing out the food scale again is a good way to measure because you can spoon the peanut butter out of the jar and the negative number will let you know how many grams you removed. Or just go for about a cup of peanutbutter.

3. Add the brown sugar and stir until creamy.

4. Add the egg and mix well. Add sea salt if you don't want to sprinkle it on top of the cookies.

5. Line a baking sheet with parchment paper and shape the dough into 12 even balls (use spoons, your hands, or both).

6. Make a crosshatch pattern on each cookie by pressing a fork into each one in two different directions. This will flatten the cookies.

7. Sprinkle a bit of sea salt on each cookie.

8. Bake for 9-14 minutes (really depends on your oven, watch for the edges starting to lift and crisp; I did 12 minutes) and let them cool really well before touching them or they fall apart.

9. Enjoy and share with boyfriends if desired. 🥰

Total: 2011kcal, 62 g protein, 209g carbs, 110.5g fat

Per cookie (1/12 recipe): 170kcal, 5g protein, 17.5g carbs, 9g fat
